    Broccoli Cheese Balls

    Ingredients

    1/2 cup (50g) Cheddar cheese
    1/2 cup (50g) Parmesan cheese
    1 head (300g) broccoli florets
    2 green onions, chopped
    2 cloves garlic, minced
    1/2 cup (60g) ground rolled oats
    1/4 cup (30g) breadcrumbs
    2-3 eggs
    Salt and freshly ground black pepper
    vegetable oil

     

    1. Preheat oven to 400F (200C). Line a baking sheet with parchment paper.

    2. Grate cheeses using the small holes of the grater.

    3. Cut broccoli florets in very small pieces and transfer to a large bowl. Add cheese, onion, garlic, oats, breadcrumbs, salt and pepper into the bowl. Add 2 eggs and mix to combine. If still too dry add another egg.

    4. Use an ice cream scoop to take equal portions of broccoli and cheese mixture and form into balls. Place the balls on the prepared baking sheet and sprinkle with a bit of vegetable oil over the top.

    5. Bake for 25 -30 minutes until slightly golden.

    6. Serve with your favorite dipping sauce or as a side dish.

    How to make Broccoli Quesadillas. Broccoli Quesadillas made with homemade tortillas takes only few minutes to prepare and the final dish is healthy and delicious, perfect for lunch or dinner. You can use any leftover cooked broccoli or you can just cook the broccoli especially for this recipe.

    Make 4 servings

    1 cup broccoli, cooked and chopped, room temperature
    1 cup mozzarella, chopped
    1/4 cup corn kernels
    1/4 teaspoon garlic powder
    4 flour loaves (10 inches), room temperature
    Salt and freshly ground black pepper, to taste
    2 tablespoons olive oil

    Direction

    1. If you want to use homemade tortillas, this should be the first step. For homemade cornbread, you can find the recipe here. Once done, let them cool down, to reach room temperature.

    2. To cook broccoli, bring a large pot of water to a boil. Add a teaspoon of salt. Add broccoli and cook until tender, about 2 minutes. Take it out and put it in a bowl of ice water. Drain and chop the broccoli.

    3. Combine broccoli with cheese, cornmeal, and garlic. Add salt and pepper. Divide the mixture into four, for each tortilla. Pour the mixture over half of the tortilla, and fold over with the other half.
